- Plain nonfat yogurt
- 1 lemon
- Dijon mustard

Ingredients
- 1 1/2 cups plain, non-fat yogurt
- 6 oz tilapia fillet
- 1 lemon, juiced
- 1/4 tablespoon Dijon mustard
- 1/4 teaspoon Old Bay seasoning
Directions
- Line a mesh strainer with a coffee filter, set it over a bowl, and spoon in the yogurt. Cover with plastic wrap and refrigerate for an hour, or overnight — this makes a thick "yogurt cheese" you can use in place of sour cream, cream cheese, or mayonnaise.
- Sprinkle the tilapia fillet with lemon juice and place it on a foil-lined broiling pan.
- Mix the yogurt cheese with the Old Bay seasoning, a teaspoon of lemon juice, and the Dijon mustard in a small bowl.
- Spoon the mixture onto the fish fillet.
- Broil under medium heat for 5-10 minutes, or until the fish is cooked through to the center.
- Serve with steamed green beans and steamed yams, optionally sprinkled with cinnamon and a little xylitol, stevia, or agave.
AHF tip: Start straining the yogurt the night before if you can — the longer it drains, the thicker and more spreadable your "yogurt cheese" topping will be.
