A classic French vegetable stew — eggplant, zucchini, peppers, and tomatoes simmered together until tender. Just as easy on the stovetop or in the microwave.


🛒 Shopping List

  • 1 eggplant
  • 1 zucchini
  • Green bell pepper
  • 1 onion
  • 2 cloves garlic
  • Canned tomatoes
  • Dried basil

Ingredients

  • 1/2 green bell pepper, sliced
  • 1/2 tsp ground dried basil
  • 2 tbsp water
  • 1/2 tsp salt
  • 1/4 tbsp black pepper
  • 3 cups cubed eggplant
  • 1 cup chopped zucchini
  • 2 cloves garlic
  • 1 cup sliced onion
  • Canned diced tomatoes, to taste

Directions

  1. Heat all the ingredients except the tomatoes in a 10-inch skillet over medium heat until the vegetables are tender, about 10 minutes.
  2. Remove from the heat and stir in the tomatoes. Cover and let stand 2-3 minutes.
  3. Serve hot.
  4. Microwave version: omit the water, mix all ingredients in a 2-quart microwavable casserole dish, cover tightly and microwave on high for 5 minutes, stir, then cover and microwave again until the vegetables are tender, 2-5 minutes longer.
Jeremy's kitchen secret: Cut all the vegetables to roughly the same size so everything finishes tender at the same time instead of some pieces turning to mush.
