- 4 large portabella mushroom caps
- 1 cup carrots
- 1 onion
- 2 cloves garlic

Ingredients
- 1 cup carrots, diced
- 1/2 cup onion, finely chopped
- 4 whole portabella mushrooms
- 2 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 2 garlic cloves, minced
- 1 tablespoon Italian seasoning
- 1 tsp black pepper
- 1/2 cup shredded non-fat mozzarella cheese
Directions
- Sauté the carrot, onion, and mushroom stems until tender. Remove from the pan.
- Sauté the mushroom caps upside down (gill-side down) for five minutes.
- Meanwhile, mix the olive oil, vinegar, garlic, Italian seasoning, and pepper together.
- Turn the mushroom caps over. Divide the carrot and onion mixture equally among the caps, drizzle with the oil mixture, and cook for an additional 4 to 5 minutes, until tender.
- Sprinkle with non-fat cheese as desired.
AHF tip: Sauté the mushroom caps gill-side down first — it helps draw out extra moisture so the filling doesn't turn watery once you flip and stuff them.
