A tangy, make-ahead side that only gets better after a night in the fridge — great for stocking up on an easy, low-glycemic side you can spoon out all week.


🛒 Shopping List

  • 2 cans green beans, drained
  • 1 can yellow (wax) beans, drained
  • 1 can mushrooms, drained
  • 1 lemon
  • White wine vinegar
  • Garlic powder, dill weed, onion flakes (pantry)

Ingredients

  • 2 cans (15 oz each) green beans, drained
  • 1 can (15 oz) yellow beans, drained
  • 1 can mushrooms, drained
  • 1/4 cup lemon juice
  • 1/2 cup white wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tbsp garlic powder
  • 1/2 tsp dried dill weed
  • 2 tablespoons onion flakes

Directions

  1. Combine all ingredients in a bowl or container.
  2. Cover and chill overnight in the refrigerator.
  3. Serve cold.
AHF tip: Give it at least a full 12 hours before serving — a quick 30-minute chill won't let the vinegar and dill really soak into the beans.
