Jerk Chicken

A Caribbean-spiced marinade — allspice, cinnamon, curry, and a little heat — turns everyday chicken breasts into something worth firing up the grill for.

- Boneless skinless chicken breasts
- 1 onion
- Chili pepper
- 1 clove garlic
- Orange juice
- Teriyaki sauce
- Cider vinegar
- Allspice, cinnamon, curry powder, thyme (pantry)

Ingredients
- 6 boneless, skinless chicken breasts
- 1/4 cup chopped onion
- 1/4 chili pepper
- 1/2 clove garlic
- 1/8 cup fresh orange juice
- 1/8 cup teriyaki sauce
- 1/4 cup cider vinegar
- 1/4 tbsp canola oil
- 1/4 tsp dried thyme leaves
- 1/4 tbsp allspice
- 1/8 tbsp cinnamon
- 1/4 tbsp ground curry powder
- 2 1/2 cups frozen veggie mix
- 1 stalk green onion
Directions
- Use a food processor to puree the onion, chili pepper, garlic, and green onion.
- Add the orange juice, teriyaki sauce, vinegar, spices, and oil, and process to combine.
- Pour the mixture over the chicken pieces and refrigerate for about 2 hours.
- Grill, BBQ, or bake until done, about 10 minutes.
- Serve with the steamed veggie mix.
AHF tip: Don't skip the 2-hour marinate — jerk seasoning needs that time to actually penetrate the chicken instead of just sitting on the surface.
