Grab-and-go version for the store. Exact amounts are in the full ingredient list below.
Ingredients
- 1 salmon fillet
- 6 medium asparagus spears
- 1 oz Parmesan cheese, grated
- 2/3 cup new potatoes, boiled
- 1/2 cup frozen green peas, boiled
Directions
- Grill the salmon for about 7 minutes on each side, or until the fish flakes easily when tested with a fork.
- Sprinkle the asparagus spears with freshly grated Parmesan and broil until the cheese melts and the asparagus is slightly charred.
- Serve the salmon and asparagus with the boiled new potatoes and peas.
AHF tip: Get the asparagus under the broiler while the salmon rests for a couple of minutes off the grill — everything lands on the plate hot at the same time.
