A lightened-up take on the classic holiday casserole, swapping canned soup for a bit of cream cheese and goat cheese instead.

- Fresh or frozen green beans
- 1 onion
- Red bell pepper
- Mushrooms
- Cream cheese
- Goat cheese
- Balsamic vinegar

Ingredients
- 2 cups green beans, trimmed
- 1 cup onion, sliced
- 3/4 cup red bell pepper, sliced
- 1 cup mushrooms, sliced
- 3 oz fat-free cream cheese
- 3 servings (28g each) goat cheese
- 4 tablespoons balsamic vinegar
Directions
- Boil the trimmed green beans in just enough water to cover for about 3 minutes.
- Toss the green beans, mushrooms, and bell peppers with olive oil or balsamic vinegar and roast for 15 minutes at 375°F.
- Meanwhile, sauté the onions in a separate pan in olive oil until tender and caramelized.
- For extra flavor, mix the roasted green beans, mushrooms, and peppers with the cream cheese and goat cheese, then bake at 400°F for 5-8 minutes, just until warmed through. Top with the caramelized onions.
AHF tip: Don't skip caramelizing the onions separately — that's where most of the classic casserole flavor comes from.
