A chilled, chunky tomato soup with a smoky kick from chipotle — no stove required, just a blender and a little patience while it chills.

  • 1 lemon
  • 1 lime
  • 1 clove garlic

Ingredients

  • 1/2 medium cucumber
  • 1 cippolini onion
  • 3 cups tomato juice, no salt added
  • 1 tbsp chipotle sauce
  • 2 large scallions
  • 1 1/2 cups cherry tomatoes
  • 4 sprigs cilantro
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 1 clove garlic
  • 1 medium green bell pepper

Directions

  1. Place the cucumber, diced tomatoes, diced cippolini onion, green pepper (seeds and ribs removed), tomato juice, cilantro, lime and lemon juice, chipotle sauce, and garlic clove (peeled and coarsely chopped) in a blender. Start on a slow speed and increase to the highest.
  2. Blend until you have a chunky soup.
  3. Serve in bowls and top with finely chopped scallions, diced tomatoes, and finely chopped cucumber.
  4. Adjust the chipotle sauce to suit your taste.
  5. Serve chilled or at room temperature.
AHF tip: Chill the soup for at least an hour before serving — gazpacho tastes noticeably better cold, once the flavors have had time to meld.
