Cauliflower Soup

A creamy, dairy-light soup that gets its body from pureed cauliflower and a touch of apple for natural sweetness — no cream required.

- 1 head cauliflower
- 1 onion
- 1 apple
- 1 clove garlic
- Nutmeg (pantry)

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, sliced
- 1 clove garlic, sliced
- 5 cups cauliflower florets
- 1/2 tsp agave (optional)
- 1/8 tablespoon nutmeg
- 1 medium apple, peeled, cored, and diced
- 4 cups water
- Salt and pepper, to taste
Directions
- Heat the oil in a saucepan.
- Add the onion, garlic, and apple, and cook until soft.
- Stir in the cauliflower and remaining seasonings and cook for 2 minutes.
- Add the water and bring to a boil.
- Reduce the heat to a simmer and cook 15-20 minutes, until the cauliflower is tender.
- Let cool for 10 minutes.
- Puree the soup with a blender, return it to the saucepan to bring back to a simmer, and season with salt and pepper.
- Garnish with parsley or lemon zest.
AHF tip: Let the soup cool for the full 10 minutes before blending — pureeing hot liquid in a regular blender can build up pressure and pop the lid.
