- Butternut squash, cubed
- 1 onion
- Curry powder, nutmeg, cinnamon (pantry)
- Soy milk
- 1 clove garlic

Ingredients
- 1/4 tablespoon extra-virgin olive oil
- 1/8 cup chopped onion
- 3/4 cup cubed butternut squash
- 1/8 tsp salt
- 1/2 tablespoon curry powder
- 1/2 tsp nutmeg
- 1/2 tablespoon cinnamon
- 1/8 tsp black pepper
- 1/2 tablespoon agave (optional)
- 1 tablespoon chopped parsley
- 1/2 cup water
- 1/4 clove garlic, minced
- 1/2 cup full-fat soy milk
Directions
- Sauté the minced garlic and onion for 2 minutes in a saucepan.
- Add all remaining ingredients except the parsley garnish.
- Stir and cook over medium heat without boiling, stirring frequently until hot, about 5 minutes.
- Puree until smooth, garnish with parsley, and serve.
