Fresh-squeezed lemon, diced tomato, and cilantro keep this guacamole bright — mash it by hand and leave some avocado chunky for the best texture.

Grab-and-go version for the store. Exact amounts are in the full ingredient list below.

Ingredients

  • 1 avocado
  • 1 cup chopped onion
  • 1 jalapeño pepper
  • 1 lemon
  • 1 clove garlic
  • 1/2 cup cherry tomatoes
  • 1/8 tsp sea salt
  • 1/4 cup chopped cilantro

Directions

  1. Microwave the lemon for 15-20 seconds, then slice in half and squeeze the juice into a medium bowl.
  2. Cut the avocado in half and remove the pit. Cut the halves in half again and gently peel off the skin. Add the avocado to the lemon mixture and mash with a potato masher or fork, leaving some of the fruit unmashed.
  3. Dice the tomatoes, onion, garlic, cilantro, and jalapeño pepper, and add to the mixture.
  4. Season with sea salt to taste.
  5. Cover with plastic wrap, pressing it onto the surface of the guacamole, and chill for a couple of hours before serving.
AHF tip: Pressing plastic wrap directly onto the surface before chilling is what keeps guacamole from browning — don't skip that step.
